Flavors good but lacking Texture
Falvors were there, but as other said, it was soupy. Was lacking texture, even with the onions and scallions on top.

Satisfied my Mexican Craving!
This dish was excellent! Easy to make and utilizes one of summer's greatest veggies! It had the right amount of kick to it and the salsa really made the dish. I have to agree it is slightly "soupy" as one reader said, but mine wasnt too bad. I sliced the squash as the recipe said. I bet it would even be great if you added some seasoned chopped cooked chicken breast to make it a one dish meal. Soooo good! I will make this one again!

Quick and easy!
As someone who often has to cook for vegetarian guests, I found this a great idea. Even if you go for the milder version (all green chiles, no jalapeños) it still has lots of flavor and character. The one note I would add is that the recipe does not serve 12 as a main course. If you pair it with, say, rice, it will serve four.

We've got so much squash in the garden and I've been looking for good recipes to prepare. This one is a winner ! Today I printed 6 copies of it for my co-workers (all had a taste as last night's dinner was today's lunch) all of whom raved about it. Minor variation: I sliced the squash very thin and the 'casserole' was more of a very heavy soup. Served with corn chips and pita chips it made for a delicious dip. Very flavorful, I'll make this again!
