I think you've got puff pastry and phyllo confused. Puff pastry comes with two sheets in one package. Phyllo comes w/ dozens and dozens of sheets. This recipe is not expensive and your remarks could be confusing to first time bakers.

Not too expensive if...
I just wanted to note that the remaining phyllo can be wrapped well and refrozen. If you wanted, you could even refreeze in sets of 6 sheets to pull out and use for making the recipe in the future.

Loved it
I've made this several times. I used the phyllo once, but for really quick, I used pre-made pie dough. (It is easy, and delicious. Not expensive when using pie dough, want to make my own dough, when ever I should have the time!)

Good filling, expensive crust
I used 1 pkg of Phyllo($5.00 for 2 sheets, the recipe calls for 6 sheets (that would be $15.00 just in phyllo). I increased cooking time 20 min. as it takes that long for the crust to brown and eggs to firm. I would increase eggs next time (2 more) to make it more quiche-like as the filling overwhelms the eggs. I would use a 13 x 9 pan and still just use 1 pkg phyllo, spread thin. I did like the lightness of the crust and would use that idea with other fillings.

Quick and easy meal
My husband who is not a quiche eater, loved it. Wasn't difficult to make and was a filling lunch or dinner. Served with a salad it was sufficent for a dinner. I was surprised how easy it was to make. Thank you for sharing this receipe.
