Good Texture, Lacking Flavor
The cheese and ale are fine, but they need some backup as written. A bay leaf (to be removed when serving), a bit of white pepper, and a pinch of nutmeg should go a long way to improve the soup. Oh, and lose the red peppers for "a chill winter's night." That's summer. Chives or parsley, much more appropriate if color contrast is wanted.

No flavor if you follow the recipe. I added garlic to the onions and then I used onion salt and pepper plus I added extra cheddar. The bacon sounds like a good idea.

Needs work - Needs flavor
Where is the flavor? Perhaps the frozen potatoes contain sodium? I used fresh. I agree with the review that suggested using bacon fat to saute the onion. Perhaps use a couple strips of bacon crumbles. Definitely use salt and maybe pepper. This recipe could be rescued. On its own, not wonderful.

No to pre-prepared veggies
Several recipes recently have called for pre-pared vegetables etc; and whilst this may save time, I never use prepared stugg - I don't know what has been done to the food, and the label will not tell me. In these days when it is necessary to protect ourselves against the ravages of Frakenfood at least we have a chande with the veggies - maybe!

Made this with only a couple of changes. I used bacon fat to soften the onions. I used a very good extra sharp cheddar. and replaced a little bit of the milk with half and half try to make it richer. I love beer and cheese, but hated this recipe....it was just plain awful. make a different potato cheese soup than this one.
