Terrible
This is a terrible recipe. I used buttermilk and Crisco instead of oil but otherwise followed the recipe. As I find with many EatingWell recipes, this had no taste and it's worse the next day. I threw the whole thing out.

Like my mom used to make.
This is how my mom made true southern cornbread. I had to chuckle at the reviewer that felt we should use a "mix" to make it easy.....huh?? Mixes are loaded with sugar, salt, and other weird things. This is a basic, simple good old REAL cornbread. My mom NEVER used sugar or flour. Used it for our base for Thanksgiving stuffing too.

This is for real
This is the recipe that my mother has made for years, and it is good! The only thing she did that was changed is that she has used bacon grease instead of oil. OH how unhealthy, but so good. I guess we can't all be paragons of virtue...

So Close...
This recipe looks and sounds close, but missed it a little. My dad usually made the cornbread at our house. He used bacon grease instead of oil, baking soda instead of powder and no egg. Two things to remember: 1) be sure to let the grease get hot enough to sizzle before adding the batter 2) The picture shows what I consider the bottom of the cornbread. Invert the skillet onto a pan and let the top of the cornbread keep that nice crust. Otherwise, what's the point??

Just Like Grandma made
Even tho Grandma is no longer here her cast iron skillets continue to dish out her cornbread recipe and many others just did not know she share them with so many :-)

True Southern Cornbread
My Grandmother was Southern and I grew up on her cornbread and home canned green beans. Her recipe is simialr to this one but she used baking soda instead of baking powder and yes she used an egg. She probably used lard in my young years but I use oil and heat it in the skillet to make a good crust. I have even taken to using melted butter in the skillet and poring it in the batter. Butter makes a great tasting batter and leaves a butter taste not an oil taste.

My Grandma's Cornbread!
Really? Too OILY?!!! My grandmother taught me to make this cornbread exactly (except we also use shortening instead of oil) years and years ago. Hot out of the oven with a slab of butter (I know, I know) . . . mmmmmmmmm goooooooooood! Never had the urge to try anything different. Can't beat perfection.

Great Basic Cornbread Recipe!
This is good cornbread, right there. I make it about the same way, except that I only use 2 tablespoons of oil, I definitely use buttermilk (and a little baking soda), and I add about 2-3 tablespoons of grated cheddar cheese and finely minced onion to the batter. Occasionally, I also will add other stuff (chopped, roasted hatch chilis or jalapenos; chopped chipotle and ground cumin; rosemary; whatever sounds good). With the extra stuff, I have to bake it a few minutes longer.
