Put the leftovers in a grilled cheese sandwich...
This was incredibly easy to make and was delicious. I doubled the recipe and used 2 pounds of red fingerling potatoes, a head of cabbage and 3 tablespoons Irish butter. I didn't have milk or white onions on hand so I added chicken stock instead of milk and 3 chopped green onions...so freaking good. I made stuffed grilled cheese with colcannon with the leftovers...THE BEST IDEA EVER. Perfect with homemade roasted tomato basil soup.

Are you sure about the potatoes?
The quantity for the potatoes looks wrong! One pound of potatoes with 6 cups of cabbage will not be noticed!
