So good!
I'm vegetarian so I altered this recipe. Instead of pancetta I used Morningstar sausage patties and I chopped them up. I also replaced the watercress with kale and I added it to the sauce last minute just so it would get nice and green but remained crunchy. My husband loved it and I will definitely be making this again. So quick and delish!

Something different
I substituted bacon for pancetta, and used 2 small boxes of grape tomatoes. The overall product turned out very good. I would definitely make this recipe again.

Delicous!
I used 4 oz of packaged diced pancetta because I didn't want to waste it and 1/2 tsp of crushed rep pepper to make it a little spicier. This recipe is extremely simple and quick. My husband and I couldn't believe how delicious it was.
