This thirst-quenching beverage, Spanish for fresh water, is a wonderful addition to any informal country inn menu.
RECIPE INGREDIENTS
2 cups peeled, seeded and diced ripe fruit such as melon, pineapple, mango and/or papaya
2 1/2 cups water, preferably filtered
3 tablespoons sugar

DIRECTIONS
In a blender or a food processor fitted with the metal blade, combine the fruit, water and sugar. Process on high speed until completely smooth, about 1 minute.


Pass through a fine-mesh sieve, pressing with the back of a spoon to extract as much juice as possible. Chill thoroughly before serving.
