Portuguese Spicy Shrimp

RECIPE INGREDIENTS
3 tablespoons vegetable oil
1/4 cup minced garlic
2 cups thinly sliced red onions
2 cups thinly sliced yellow or white onions
1/2 cup seeded and diced fresh red chili peppers
8 tomatoes, each cut into 6 wedges
2 pounds uncooked large shrimp, peeled, cleaned, and deveined
2 cups tomato juice
1/2 cup chopped scallions
1/4 cup chopped parsley
1/4 cup chopped cilantro
DIRECTIONS
In a stock pot, warm the oil over moderately high heat. Add the garlic and onions and sauté for 5 minutes.


Stir in the chilies, tomatoes, salt and pepper, and the shrimp. Cook, stirring and tossing, for 5 minutes.


Add the tomato juice and scallions and bring the mixture to a simmer. Stir in the parsley and cilantro and cook for 1 minute. Serve hot.
