Amaretto Bread Pudding

1 Loaf French Bread 1 ½ Cups Granulated Sugar
1 Quart Half and Half 2 Tablespoons Almond Extract
2 Tablespoons Butter (room temp) ¾ Cup Golden Raisins
3 Eggs
¾ Cup Sliced Almonds
Amaretto Sauce
1 Cup Confectioners Sugar
8 Tablespoons of butter
1 Egg (well beaten)
4 Tablespoons Amaretto Liqueur

Step # 1: Make the Amaretto Bread Pudding

1. Break bread into small pieces. Place in medium sized bowl and cover with half and half. Cover and let stand for 1 hour.

2. Pre-Heat oven to 325 degrees. Grease 9x13x2 inch baking pan with butter.

3. In a small bowl, beat together eggs, sugar, and almond extract. Stir mixture into bread. Gently fold in raisins and almonds into mixture.

4. Spread mixture evenly into baking dish. Bake on middle rack of oven for 50 minutes or until golden. Remove and let cool.

Step # 2

Make Amaretto Sauce

1. On top of double boiler over simmering water, stir together butter and sugar. Stir constantly until butter and sugar are dissolved and mixture is very hot.

2. Remove from heat, whisk egg into the mixture. Continue whisking until sauce is room temperature.

3. Add the Amaretto liqueur.

4. With the wooden handle of spoon, make holes in the baked pudding, and pour sauce over the budding.

This was our first attempt at Bread Pudding. It was easy took very little time and was absolutely fantastic! It makes you keep wanting more. I have since given the recipe to a number of people. This recipe will definately be on the top of my list of desserts.
