Apple Corn Muffins

RECIPE INGREDIENTS
2/3 cup cornmeal
1-1/3  cups unbleached all-purpose flour
1 tablespoon baking powder
2 tablespoons sugar
1 teaspoon cinnamon
1/2 teaspoon salt
2 eggs, lightly beaten
1/3 cup honey
1/3 cup margarine, melted
1 cup grated unpeeled apple
DIRECTIONS
Preheat the oven to 425 degrees F.


In a large mixing bowl, combine the cornmeal, flour, baking powder, sugar, cinnamon, and salt. Mix well. Stir in the eggs, honey, and margarine. Stir just to combine. Do not overmix. Stir in the apple.


Fill paper-lined muffin tins two-thirds full. Bake for 20 to 25 minutes.
