Yield:  Makes 1 quart
Use for a quick dessert with fresh cream or to fill pastry shells.
RECIPE INGREDIENTS
2/3 cup dried figs
2/3 cup dried pears
3/4 cup dried peaches
1/2 cup dried apples
1 cup prunes
1/2 cup raisins
2/3 cup apricots, peeled, pitted and chopped
1 vanilla bean
3 cups brandy

DIRECTIONS
Fill jars with fruits and vanilla bean. Cover completely with brandy. Seal and store in a dark cupboard for at least 2 weeks - the longer, the better. If you prefer a sweeter brandy, add sugar to taste. Will keep indefinitely; keep adding more fruit and brandy as needed.
