Yield:  Makes 3 cups (Serves 24)
RECIPE INGREDIENTS
1 cup minced onion
2 cups peeled, chopped fresh ripe tomatoes with their juices
1/2 cup minced fresh italian parsley
1 hot green chili pepper, seeded and minced
2 tablespoons olive oil
salt and freshly ground black pepper
DIRECTIONS
In a bowl, mix all of the ingredients together.


Let the salsa stand for 15 minutes before serving.
