Chocolate Souffles

  Makes 6 servings
8 ounces semisweet chocolate
7 tablespoons water
1/4 cup butter
4 egg yolks
1/4 cup granulated sugar
10 egg whites
Confectioners' sugar, for serving (optional)
Preheat the oven to 400 degrees F. Lightly butter and sugar 6 individual soufflé molds.

Melt the chocolate in a double boiler with the water. Remove from the heat and stir in the butter. Cool to room temperature.

Whisk the egg yolks and sugar together until they’re a light lemon-yellow color, then add to the chocolate.

Beat the egg whites until stiff peaks form. Stir 1/3 of the egg whites into the chocolate mixture to lighten, then gently fold the chocolate into the egg whites.

Divide the butter evenly among the molds and bake for 10 minutes. Sprinkle with powdered sugar, if desired, and serve immediately.
