Cool and Spicy Thai Beef Salad

Yam Nua (Thai beef salad) is my favorite Thai dish. But I wanted something cool for in the summer time. I adapted the recipe to my taste and have been making it for years. I have made it for several pot lucks and always have to email the recipe to others!
RECIPE INGREDIENTS
1 lbs. flank steak (sirloin works GREAT too)
1/2 Cup + 5 TBSP Fish Sauce (divided)
2 cloves garlic, diced small
3 chili peppers, diced small (leave seeds in)
1/4 cup cilantro, coarsely chopped
2 TBSP sugar
2 limes
4 stalks celery, sliced very thin diagonally
2 ripe tomatoes, quartered and sliced
1 cucumber, halved and sliced
10 oz. bag matchstick carrots
1 med. white onion, quartered and sliced very thin

DIRECTIONS
Marinate steak in 1/2 cup fish sauce for about 30 minutes.


While meat is marinating, make the sauce: combine 5 TBSP. fish sauce, diced garlic, diced peppers, chopped cilantro, sugar and lime juice in a large non reactive bowl. Set aside.


Grill or broil steak to a medium rare.


In a large bowl combine prepared celery, tomatoes, cucumber, carrots and onion. Set aside.


After steak is a medium rare, remove from heat and let stand for 10 minutes. Slice very thinly, against the grain.


Add sliced steak to the sauce mixture and toss lightly.


Add meat and sauce mixture to vegetables. Toss.


Refrigerate at least one hour to let flavors mingle.


Serve cold. May be served over a bed of lettuce or with rice on the side.
