Easy Cheesy Touchdown Bean Dip

Yield:  Serves 8
Garnish with cilantro and serve with Wild Oats Natural Tortilla Chips and frosty margaritas. Cheers!
RECIPE INGREDIENTS
One (16 ounce) can refried beans
1 (8 ounce) package Wild Oats Cheddar Cheese, shredded
3 tablespoon cilantro, diced
1 tablespoon chili powder
1 teaspoon cumin
2 tablespoon lime juice
1 teaspoon sea salt
1/4 cup roasted green chiles, fresh or canned
Wild Oats Natural canola oil
1/2 purple onion, diced
2 cloves garlic, minced
1/2 red pepper, diced

DIRECTIONS
Preheat oven to 350 degrees F. Open beans and empty into a baking dish. Stir in shredded cheese, cilantro, chili powder, cumin, lime juice, salt and chiles.


Sauté onion, garlic and red pepper in canola oil until soft. Add sautéed mixture to the beans. Mix well.


Pour mixture into a baking dish. Cover with reserved cheese and bake for about 15 to 20 minutes or until the cheese is bubbling.


Garnish with cilantro and serve with Wild Oats Natural Tortilla Chips and frosty margaritas. Cheers!

Made this recipe for a party and everyone liked it, but said it waas missing something. Next party we had I made it again and added 1/2 cup of sour cream. Everyone loved it and I had no leftovers!
