Gold Nugget Salad

I've used this recipe to celebrate Golden Days in Fairbanks (celebrating the discovery of gold here 100 years ago) and for a Pittsburgh Steelers super bowl (their colors are black and gold)
RECIPE INGREDIENTS
6 cups of chicken stock
1 bay leaf
2 cups frozen or fresh corn
2 cups black beans
½ medium purple onion chopped
1 red pepper chopped
4 green onions chopped
¼ cup of canned green chilis, chopped
Marinade:
½ cup red wine vinegar
¾ cup virgin olive oil
2 Tbsp lemon or lime juice
4 closed of garlic, chopped
1 tsp. Dried marjoram or oregano
1 Tbsp cumin
2 Tbsp dried basil
¼ cup fresh cilantro, chopped

DIRECTIONS
Soak beans overnight in water and cook in stock with bayleaf until tender (1-2 hours). Whisk together the marinade ingredients. When beans are tender, drain, remove bay leaf (discard) and mix beans with marinade while hot. Add remaining ingredients and chill for at least 2 hours, stirring occasionally. Keeps for several days
