Granola Flan with Fresh Fruit Sauce

Yield:  Makes 4 servings
RECIPE INGREDIENTS
2 cups granola, pulsed in food processor to break down lumps
1/2 cup honey
1 cup sliced strawberries
1 ripe papaya, peeled, seeded, and cut into chunks
2 small bananas, peeled and cut up
1/3 cup orange juice
Garnishes:
Whole strawberries
papaya slices
Sprigs of mint
DIRECTIONS
Preheat the oven to 350 degrees F. Grease an 8-inch pie pan.


Combine the granola and honey in a bowl. Mix thoroughly and press into the pan firmly to obtain an even, compact layer. Bake for 10 minutes. Remove the pan to a rack to cool.


Combine the fruit and orange juice in the container of a food processor and puree. Press through a strainer to make the sauce as smooth as possible. Chill until ready to serve.


Place some of the sauce on a serving plate and place a slice of the granola flan on top. Garnish with whole strawberries, papaya slices, and a sprig of mint.
