Makes 4 cups (1 quart)
Although lemongrass tea, with its beautiful topaz color, is usually drunk hot, here it is served as a refreshing iced tea.
RECIPE INGREDIENTS
1 bundle
lemongrass
stalks (2-1/2 oz), washed
5 cups water
1/4 cup
sugar
, or to taste
DIRECTIONS
Place the lemongrass in a saucepan with 3 cups of the water. Cover and simmer gently over mediun heat for 5 to 8 minutes or until the liquid is aromatic and yellow-green in color. Remove from the heat, add the sugar, and stir until dissolved. Cool, and strain into a glass pitcher. Add the remaining 2 cups of water.
Chill until very cold. If you add ice, serve immediately to avoid diluting the flavor.
