Yield:  Makes about 4 cups
RECIPE INGREDIENTS
2 medium mangoes, peeled, pitted, cut into 1/2-inch pieces
1/2 small red onion, finely chopped
1 small red bell pepper, finely chopped
1 tablespoon minced peeled fresh ginger
1 medium jalapeno chile, seeded if desired, minced
Juice of 1 large lime
1 cup cooked black beans
1/4 cup chopped fresh cilantro
DIRECTIONS
Fold all ingredients in medium glass or ceramic bowl. Cover and let stand at room temperature 30 minutes.


DO-AHEAD TIP: Can be made 1 day ahead. Refrigerate.


CHEF'S TIP:
  • Use gloves when peeling and mincing chiles. If no gloves are available, rub a bit of oil into your hands to help reduce the burning sensation afterwards.
