Mango and Orange Salad

Yield:  Makes 4 servings
RECIPE INGREDIENTS
1/2 cup thinly sliced red onion
1 tablespoon rice vinegar
2 Mandarin oranges or clementines
1 mango, peeled and cut into 1-inch cubes
1 tomato, about 1/2 pound, chopped
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
4 to 6 romaine lettuce leaves
DIRECTIONS
In a medium bowl, combine the red onion and the vinegar and set aside.


Peel the oranges and, with a paring knife, scrape off any pith left on the oranges. Break the oranges into segments. With the tip of the paring knife, pop out any seeds. Add the orange segments, mango, and tomato to the red onion. Toss together and season with the salt and pepper.


Line a serving plate or bowl with the lettuce leaves, place the salad in the center. Refrigerate for 20 minutes and serve.
