Orange Pecan Crusted Pork Sliders with Raspberry Slaw

Bright citrus and crunchy, pan-fried pork cutlets make for engaging flavors and textures, but take it easy on the blue cheese: it has a way of taking over.
RECIPE INGREDIENTS
2 cups coleslaw mix
1/4 cup blue cheese crumbles
1 (11 ounce) can mandarin oranges, drained
1/4 cup raspberry vinaigrette dressing
1 pound pork tenderloin, sliced crosswise in 10 pieces
1/4 cup orange marmalade
1 cup bread crumbs
1/2 cup finely chopped pecans
2 tablespoons cooking oil
10 small split buns

DIRECTIONS
In a large bowl toss coleslaw mix with cheese, oranges and dressing. Cover with plastic wrap and place in refrigerator until ready to use.


Using hands press pork pieces to ¼ inch thick. Rub marmalade into pieces.


In a shallow bowl combine bread crumbs and pecans. Coat each pork piece one at a time with mixture. If need be press mixture to stick to pieces.


In a large skillet heat oil over medium high heat. Cook pork in hot oil 2 to 3 minutes per side, or until done.


For sliders, place a slice of pork on bottom bun, top with prepared slaw and top with other bun half and serve.

It's amazing. I had never had any sort of slaw other than the regular boring cole slaw before this and it was really good. I used the pork I got with a $1 off coupon from printablecouponsanddeals.com
