Oven Fries for Two

You'll find yourself making these fries often; simple yet as satisfying as their fried cousins.
RECIPE INGREDIENTS
1   large Yukon Gold potato, peeled and cut into wedges
2 teaspoons  extra-virgin olive oil
1/4 teaspoon  salt
1/4 teaspoon  dried thyme (optional)

DIRECTIONS
Preheat oven to 450 degrees F.

Toss potato wedges with oil, salt and thyme (if using). Spread the wedges out on a rimmed baking sheet. Bake until browned and tender, turning once, about 20 minutes total.

This recipe is fantastic as it is. Please don't change a thing. I don't understand why anyone would spray their food with a chemical spray and call it healthier. The olive oil is plenty healthy for you. Truth be told, once inside your body, where it counts the most, the oil is much more healthier than the potato. But Potatoes taste good and there is a lot of things that can be done with them. Besides, only 2 tsp of oil was used in the recipe and most likely half of that clung to the baking dish.
