Potato Frittata

An excellent dish for Brunch is the Frittata. You can use most any vegetable in place of the potato and change the fillings to suit yourself. We like this any time of year and make it up according to what is in the frig! We frequently use leftovers.
1 tablespoon extra-virgin olive oil
6 to 8 small red potatoes, sliced
1/2 cup onion, chopped
2 garlic cloves, minced
8 large eggs
1/4 cup milk
8 slices Canadian Bacon, Chopped
2 tablespoons minced fresh flat-leaf parsley
1/4 teaspoon salt
Freshly ground black pepper
1/2 cup grated Cheddar
4 or 5 green onions sliced, use both white and green parts.
Have all ingredients prepared to add to skillet before beginning.

Cook potatoes in microwave or used boiled potatoes.

Heat skillet to medium high heat.

Cook onion until translucent, stirring occasionally.

Add garlic, allow to heat through.

Remove onion and garlic from skillet.

Add potatoes to brown.

Return onion and garlic to skillet.

Add mix of eggs, parsley, milk, salt and pepper to skillet.

Sprinkle the chopped Canadian Bacon over the egg mixture.

Cover skillet and allow to cook approximately ten minutes.

Uncover skillet, add cheddar cheese and green onion.

Place skillet, uncovered, in 400 degree oven to finish cooking.

Oven time should be five to six minutes. Check it.

Serve hot or cold with sliced ripe tomatoes, avocado, salsa or your favorite topping.
