Rocky Road Brownies

Sticky, gooey and yummy describes this decadent chocolate brownie.
RECIPE INGREDIENTS
1 cup butter
2 cups sugar
2 tsp. vanilla
1/3 c. cocoa
4 eggs
1 1/2 cups all-purpose flour
1/2 cup chopped nuts (your favorite)
1 pkg. miniature marshmallows
Chocolate Butter Cream Frosting:
1 cube butter
1/3 cup cocoa
1 2/3 cup powdered sugar
1/3 cup evaporated milk
1 tsp. vanilla
DIRECTIONS
Line 1/2 sheet jello roll pan with aluminum foil, making sure it overlaps edges of the pan. Spray with Pam Spray. Melt the butter in a saucepan on low heat and stir in vanilla, sugar, and cocoa. Add the four eggs one at a time and beat well. Remove pan from heat. Add the flour and nuts. Spread on prepared pan and bake at 350 degrees for 20 minutes. Heat oven to 400 degrees. Pour whole bag of fresh miniature marshmallows onto brownies and distribute evenly. Bake at 400 degrees for 5 minutes or until marshmallows are golden brown and puffy. Immediately spread chocolate butter cream frosting over the marshmallow layer, allowing marshmallows to melt and mix with frosting. Cut to score after cooling 20 minutes. Cool competely. Serves 15.


Butter Cream Frosting: Beat ingredients together until smooth and creamy. You may need to add more powdered sugar to desired consistency.
