the total breakfast

RECIPE INGREDIENTS

8 Yukon gold potatoes

1 large red onion

3 cloves garlic

6-8 slices of cooked bacon

(I use precooked)

2 tbs. butter

2 tbs. olive oil

shredded sharp cheddar cheese to taste

DIRECTIONS

Boil potatoes until nearly cooked - still firm. Spray pie pan or brownie size pan with cooking spray. Shred potatoe in pan. Season with salt and pepper.

Chop onion and garlic and saute slightly (or microwave) in butter/olive oil. Crumble bacon over potatoes. Pour onions and garlic over potatoes and mix well in pan. Shred sharp cheddar over top. Bake at 350 for about 1/2 hour.
