Sorento Style Pasta

Because the ingredients in this sauce are not actually cooked, it has a particularly fresh flavor.
RECIPE INGREDIENTS
1 1/4 lb ripe tomatoes, peeled, seeded and chopped
3 oz black gaeta olives, pitted
2/3 cup olive oil
1 garlic clove, minced
A little myrrh or dried sweet cicely seeds
1 teaspoon dried oregano
1 cup chopped basil
1 1/4 lb fusilli
1 1/4 cups freshly grated caciotta cheese

DIRECTIONS
In a bowl, combine the tomatoes, olives, olive oil, garlic, myrrh, oregano and basil. Set aside for at least 30 minutes, stirring from time to time to blend the flavors.


Meanwhile cook the pasta in boiling salted water until al dente. Drain and transfer to a large serving dish. Add the sauce and cheese. Mix well. Serve at once.
