South of the Border Grilled Corn

This is a great way to enjoy grilled corn. It is slightly spicy but you can add more spice to it if you want to.
RECIPE INGREDIENTS
4 ears Corn on the cob
6 tbsp Unsalted butter, room temperature
2 tbsp Finely minced fresh cilantro
2 tsp Garlic, minced
1 tsp Chili powder, optional
¼ tsp Adobo powder
½ tsp Kosher salt
¼ tsp Freshly ground black pepper

DIRECTIONS
Set up the grill for direct grilling


Place the butter, cilantro, garlic chili powder and adobo powder in a bowl. Beat until smooth and creamy.


Remove corn husks and silk from the corn and clean thoroughly. Brush corn with butter and arrange on the grate directly over the fire. Grill the corn until the kernels are lightly browned on all sides, turning as needed. Brush the corn with more butter mixture and season with salt and pepper, if desired.


Serve at once.
