Spiced Apple Cake

ingredients

  • Vegetable oil spray, for greasing pan
  • 2 cups unsweetened applesauce
  • 1 peeled or unpeeled red apple, core removed, cut into small dice (about 2 cups)
  • 1 peeled or unpeeled green apple, core removed, cut into small dice (about 2 cups)
  • 1 teaspoon vanilla extract
  • 4 egg whites
  • 1/2 cup raisins
  • 2 cups whole-wheat flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg

Preheat the oven to 325 degrees F. Grease a standard 17-x-11-x-1 inch jelly roll pan.

In a bowl, blend the applesauce, apples, vanilla, egg whites, and raisins until well combined. Set aside.

In a second bowl, combine the flour, sugar, baking powder, cinnamon and nutmeg.

Fold the wet ingredients into the dry ingredients until combined. Use a spatula to evenly spread the batter in the pan. Bake for 30 minutes. Cool the cake in the pan on a wire rack. Slice and serve.
