Spiced Apple Cake

This recipe is very low in fat and totally free of ingredients that contain cholesterol. There are about fifty calories in a two-by-two-inch piece, along with a rich sweet taste.
vegetable oil spray, for greasing pan
2 cups unsweetened applesauce
1 peeled or unpeeled red apple, core removed, cut into small dice (about 2 cups)
1 peeled or unpeeled green apple, core removed, cut into small dice (about 2 cups)
1 teaspoon vanilla extract
4 egg whites
1/2 cup raisins
2 cups whole-wheat flour
1 cup granulated or fructose sugar
1 tablespoon baking powder
2 teaspoons cinnamon
1 teaspoon nutmeg
Preheat the oven to 325 degrees F. Grease a standard 17-x-11-x-1 inch jelly roll pan.

In a bowl, blend the applesauce, apples, vanilla, egg whites, and raisins until well combined. Set aside.

In a second bowl, combine the flour, sugar, baking powder, cinnamon, and nutmeg.

Fold the wet ingredients into the dry ingredients until combined. Use a spatula to evenly spread the batter in the pan. Bake for 30 minutes. Cool the cake in the pan on a wire rack. Slice and serve.
