Cheesy Spinach & Artichoke Dip

Bacon and mozzarella add a new twist to this old favorite.
RECIPE INGREDIENTS
2 packages frozen chopped spinach
2 cans artichoke hearts (3-4 artichokes if you use fresh)
1 lb. bacon
3 tbls. mayo
8 oz. sour cream
1/2 of an onion- chopped
1 pkg shredded mozzarella cheese divided(if you want to change it up a little and add fresh mozzarella balls for a creamier, richer spread)
1/2 tea. garlic- minced
salt and pepper

DIRECTIONS
-fry up that bacon and let it cool then chop it up


-sautee spinach and take a dish towel dump the spinach inside and wring it out. Set aside


-in a mixing bowl add all other ingredients (1/2 the mozzarella), mix in spinach and bacon


-pour into a baking dish and add the rest of the mozzarella on top and bake for 20-30 minutes on 350 degrees


This is a thicker dip so use it as a spread with pita chips or triscuits


You can still use it as a dip with the traditional tortilla chips just make sure they are scoops or sturdy chips.
