RECIPE INGREDIENTS
2 cups strawberries
2 cups  water
1/2 cup superfine sugar
1 tablespoon lemon juice
2 egg whites

DIRECTIONS
Combine strawberries and water in a saucepan, bring to a boil. Reduce heat and simmer 15 minutes. Add sugar and stir constantly over heat, without boiling, until sugar dissolves. Cool mixture. Stir-in lemon juice.


Place mixture in the bowl of a food processor and process until smooth. Pour mixture into a rectangular pan 13 X 9 in and freeze until partly set - about 1 hour. Remove mixture to bowl of a food processor, add egg whites and process until combined. Return to pan, cover and freeze.

too hard
I thought this recipe was too hard to make given the small amount that it yielded. I also couldn't scoop it into a ball easily, and it melted super fast as soon as it hit the bowl. I removed the seeds with a wire mesh strainer because who wants seeds in their sorbet? This recipe can be doubled, and it doesn't need superfine sugar, granulated sugar is fine because it disolves in cooking. I won't keep this recipe or make it again.
