Stuffed Apples

RECIPE INGREDIENTS
6 yellow or other baking apples
1 tablespoon margarine
1/2 cup chopped walnuts
1/2 cup chopped dates
1/2 cup chopped dried figs
1/4 teaspoon vanilla extract
1/4 cup brown sugar
1/4 cup apple juice
DIRECTIONS
Preheat the oven to 350 degrees F.


Core the apples. Hollow out the center from 4 of them, reserving their tops. Peel the remaining 2 apples and slice into rings. Place the rings on a baking sheet that has been sprayed lightly with vegetable oil. Place the 4 hollowed-out apples, with their tops in place, on the baking sheet. Bake the apples for 45 minutes.


When the apples are ready, in a large sauté pan, heat the margarine over medium-high heat. Add the walnuts, dates, figs, vanilla extract, brown sugar, and apple juice. Stir until the sugar dissolves and the mixture begins to boil. Cook for 2 minutes more.


Divide the apple rings among 4 dessert plates and arrange in a circle. Place a whole apple in the center of each plate. Spoon some of the fruit-nut filling into each hollowed-out apple. Replace the tops. If there is additional filling, spoon over the slices.
