Tagliatelle with Zucchini Flowers and Shrimp

This is one of the most modern and interesting examples of the Ligurian combination of vegetables with seafood.
RECIPE INGREDIENTS
1 shallot, finely chopped
2 tablespoon olive oil
3 tablespoon butter
8 large shrimp (king prawns), peeled
12 zucchini flowers, cut into thin strips
1/2 cup heavy cream
10 oz tagliatelle
salt and freshly ground pepper

DIRECTIONS
In a skillet, cook the shallot with the olive oil and butter. As soon as it browns add the shrimp and cook for 4 minutes.


Add the zucchini flowers and toss. Taste for salt and pepper.


Gently stir in the cream to finish, then turn off the heat.


Cook the pasta in boiling salted water until al dente; drain. Dress with the prepared sauce and serve.
