Three-Corn Casserole

Quick and easy prep casserole that is always requested at holiday celebrations, i.e., Thanksgiving (a must in my house) and Christmas (a must ), and it's a great compliment to any Fall or Winter meal. It's been a staple in my home for 20+years.
RECIPE INGREDIENTS
1 (14 3/4oz)can fresh-cut corn
1 (14 3/4oz)can creamed corn
1 box Jiffy corn muffin mix (or equivalent other brand)
3 T.butter, softened
3 eggs, slightly beaten
1 (8oz)ctn. prepared French onion dip
DIRECTIONS
Preheat oven to 350 degrees.


With a large spoon, mix fresh-cut corn & creamed corn.


Add 3 tbl.butter & 3 eggs.


Mix well.


Add corn muffin mix & blend in completely.


Mix in onion dip & make sure everything is well blended.


Grease or spray with cooking oil, a 8x8x2-inch casserole or baking dish & pour mixture into it.


Bake for 35-40 minutes or until middle is done & top is golden brown.


Serve hot.

I made this dish for my family on Thanksgiving. I used fresh corn on the cob and grilled it first, then added half of one red bell pepper and half of one green bell pepper for added color and flavor. I, and a couple of guests, thought it was wonderful. A few people, my kids, thought it would have been fine without the bell pepper.
