RECIPE INGREDIENTS
For Fruit Salad:
1 cantaloupe
2 papayas
10 oz fresh lychees
4 kiwi fruits
For Dressing:
1 pound pineapple flesh
1/3 cup coconut milk
2 tablespoons white rum

DIRECTIONS
TO MAKE FRUIT SALAD: Peel and slice all of the fruit into bite-size pieces and toss together in a serving bowl.


TO MAKE DRESSING: Place the pineapple in a food processor and process to a puree. Strain through a sieve.


Return to the processor, add the coconut milk and rum and process until combined. Pour the dressing over the fruit salad and serve.
