Clafouti, a classic pudding which originated in the Limousin region of France, is traditionally prepared with black cherries. In this recipe, a variety of fruits have been used, but you can incorporate nearly any of your favorites. Sift a dusting of confectioners’ (icing) sugar over the top of the cooled cakes before serving, if you like.

RECIPE INGREDIENTS

1/2 cup whole blanched almonds or 2/3 cup purchased ground almonds

1/2 cup milk

1/2 cup heavy cream

1/3 cup plus 1 tablespoon sugar

2 eggs

1/2 vanilla bean, split in half lengthwise

1 tablespoon unsalted butter

3/4 cup peeled, cored and diced firm green apple

1 mango, peeled, pitted and diced

1/2 cup blackberries

DIRECTIONS

Preheat an oven to 400 degrees F.

If you are using whole almonds, place the nuts in a nut grinder or in a food processor fitted with the metal blade. Grind or process until the nuts are a fine powder. (Do not overprocess.)

In a large bowl, combine the milk, cream, ground almonds, the 1/3 cup sugar and the eggs. Using the tip of a knife, scrape the seeds from the vanilla bean directly into the bowl. Using a wire whisk, mix until well combined; set aside.

In a sauté pan over medium heat, melt the butter. Add the apple and the 1 tablespoon sugar and sauté, stirring, until lightly caramelized, 3-4 minutes. Remove from the heat.

Scatter the apples, mango and blackberries in the bottom of 4 round gratin dishes 5 1/2 inches in diameter. Pour the milk-cream mixture evenly over the fruit.

Bake until the pudding is set and a knife inserted into the center comes out clean, 20-25 minutes.

Transfer to a rack and let cool for at least 30 minutes before serving warm.
