When sweet Vidalia onions are in season, slice them up thick for these baked onion rings.
RECIPE INGREDIENTS
2   vidalia onions
2/3 cup  buttermilk
3/4 cup  fine dry breadcrumbs
1/2 teaspoon  salt
1/4 teaspoon  freshly ground pepper
olive oil cooking spray
DIRECTIONS
Preheat oven to 350°F. Lightly oil a baking sheet.


Cut onions into 1/2-inch rounds and separate into rings. Place in a bowl and toss with buttermilk. Combine breadcrumbs, salt and pepper in another bowl. Dredge onion rings in breadcrumbs and place on the prepared baking sheet. Lightly mist with olive oil cooking spray. Bake until lightly browned, about 25 minutes.

Not delicious
Although it seemed simple, it wasn't. Ended up soggy despite 25 min. at 350 degrees. Disappointing recipe.
