  There are clearly two schools of thought regarding portions: too much and just right. Some people don't feel comfortable unless they know that there will be leftovers, others prefer that it all disappear by the end of the meal. In estimating how much to prepare, one must also consider the size and appetites of those being fed:
Occasionally a 5 year old will eat ten hors d'oeuvres, but perhaps this is not ideal!
As a rough average, one medium sized, medium hungry person could consume what is listed below:

4 to 8 Hors d'Oeuvres
1 cup Soup
1/4 of a Head of Lettuce
1/3 lb Boneless Meat or Fish
1 lb Poultry with bone in
(more for duck or goose)
1/4 lb Vegetables
1/3 lb Rice, beans, etc.
1/4 lb raw   Pasta
1/4 cup Gravy
