These Kyocera Ceramic knives are a unique alternative to metal-based versions with a resin handle for a highly controlled grip. Unlike a forged metal blade, which is soft and susceptible to chemical corrosion, the Kyocera zirconium oxide blade resists this wear and holds its edge for months to years without sharpening. Stain and rust-resistant, the blade is impervious to the food acids, which discolor steel products. A non-stick ceramic surface makes for easy cleanup and a lightweight and perfect balance make it a pleasure to use. I really enjoy this new knife; it is cool looking; very sharp, light and cuts everything with little pressure; you never will saw back and forth to cut anything again; the only thing; if anything that I probably wanted was a bit longer knife and maybe a little more weight. other than that. it is my 1st good knife I bought and it was worth every dollar. I use it for everything; but I have to hide it because I don't want anyone to cut their finger off!

A great knife

I used my cashback bonus from Discover Card to help offset the cost of this knife. Had it been full price I never would have bought it but it is worth every penny either way. It's sharp, light and does some amazing cutting. It's also been a topic on several occasions when guests see me using it.

Great Knife

This is our second Kyocera Ceramic knife; the first was a smaller Santoku model.
They both are great to use -- light, exceptionally sharp, and easy to control.
We have used and appreciate Kyocera's re-sharpening servicew. I had abused the knife by cutting through a chicken back bone and chipped the edge.
Kyocera restored the edge and returned it good as new.

Excellent knife. The handle on my old one broke, and others I tried were awkward or heavy, or just didn't cut well. This is light and my hand fits the handle perfectly. I cook every meal and use the knife primarily to cut vegetables at least three times a day. A great knife, especially for women.

Kyocera ceramic knife

I have many quality knives that are regularly sharpened however none can compare with the silky smooth cutting ease of the Kyocera. I received the knife as a Christmas gift and was very skeptical. I have arthritic hands so my grip strength is reduced, making it essential that I have super sharp knives. This knife is amazing and now I am a believer. However, even though I was VERY careful, I succeeded in shaving a layer or two of my finger on one occasion.

fabulous knife

I am a knife snob and hate picking up a dull knife, but also hate having to sharpen all the time. A friend recommended this knife and from my first use, I was hooked. SO SHARP and WHAT a great cut! It is expensive, but not in the long run as I am hopeful for a very long life and LOTS of use!

Well balanced utility knife

I purchased this knife at the same time that I purchased a similar paring blade(previously reviewed). We were very impressed how the blade went through a dense, seeded roll with virtually no effort. Cutting vegetables was equally as effortless.

CERAMIC SANTOKU IS RAZOR SHARP

Classify us as Cutlery Affectionados. We have every major brand of cutlery adorning our kitchen. After a short one month trial period so far, I can say this knife by far and away allows us to cut waiffer-thin, almost transparent slices of our meats and veggies. It has held it's razor edge sharpness better than the other high quality carbon or stainless cutlery in our counter top Block. Time will eventually tell, but out of the starting block this knife is a clear winner.

My new "everyday" kitchen knife.

I originally bought this knife to slice ripe garden tomatoes which it does flawlessly. Over a couple of weeks, however, I found myself reaching for it for many other tasks. It's light weight, comfortable handle and extreme sharpness make an ideal choice for slicing and dicing vegetables. When a recipe calls for chopped bacon or prosciutto, out comes the Kyocera. Want thin slices of meat for sandwiches? This knife is perfect. It is not designed for cutting bone or other hard substances and care mist be taken not to drop it on the floor or try to pry with it as it can break. Other then that, this is a perfect everyday kitchen knife.
