Awesome Bread Machine

I did a lot of research on bread machines before purchasing this one. I had read a few reviews with people complaining about the bread sticking in the pan when they tried to turn it out and I was a little concerned, but I decided to try it anyway. There must have been a change to the pan since those customers had bought it because I haven't had a single problem. I have baked bread in the machine, used it on just the dough cycle, used the recipes that came with it and adapted others from recipes in cookbooks. I don't have a single complaint. This machine is amazing. It evenly distributes anything that you need to add to your dough, it kneads thoroughly and as someone who lives in the very cold north, I appreciate the cozy place to raise my dough. This machine is extremely easy to use. The directions are very clear and the options on the machine are very straight forward. Anyone can figure it out. There is nothing more wonderful than the smell of bread baking and it's even better when it takes so little effort to have a loaf of homemade bread. I would highly recommend this machine to anyone who is interested.

I have had many bread machines and have loved most of them--I usually have three at one time which get a real workout during holiday times.
This machine is great--I love the shape of the loaf. There are a couple of features that I wish it did have though that it doesn't have. The ability to automatically add fruits/nuts is found in my old Breadman (which was half the price)--that is a great feature that I always used and miss. And since this machine has two paddles, I like to remove them to avoid giant holes in the bottom of the bread. It would be nice to at least have a beep to let you know when the last kneading has taken place so the paddles can be removed. It requires some math and figuring to arrive at the time the paddles can be removed and it can be done. The posts that are part of the bucket still leave holes but they aren't objectionable.
That being said, this Zo does a great job with all types of dough and the quick cycle produces a very nice textured product.

2-lb. Supreme Bread Machine by Zojirushi

I have been baking bread non-stop since I received this machine (about 2 weeks). This is my second bread machine (I originally bought the DAK machine way back when....remember them!). It has been a few years since I have used a bread machine, and I look forward to getting back to baking my own bread. I originally decided to find a machine because I was having trouble finding a good store bought pumpernickel. After some research I decided to purchase this one and it has been an easy machine to use. I would strongly recommend this bread machine.

I was disappointed in the Zojirushi bread machine. I use only whole grains and while the motor was strong enough to handle mixing these grains with no problem, I found that unless I listened for the kneading to stop and then MANUALLY shaped the loaf by hand, I got ugly, non-symetrical shaped loaves - sometimes with some of the ingredients left in the corners of the pan and not mixed in at all. If I reshaped the loaf by hand, the bread looked and tasted delicious. For a $200 bread machine, I found this unacceptable. I have NEVER had a problem with my Breadman or my Oster machines not mixing and shaping loaves correctly even with the whole grains (they have other problems) but at least they do a better job mixing the ingredients.

I've made several loaves of bread & dough recipes that have not turned out. I've had Breadman Plus for the past 10 yrs. & used the same recipes (from various books, not Breadman) & could hardly mess them up. With this Zojirushi, I've even tried the "homemade" cycle to get it to mimic the Breadman's cycle with no luck. They were somewhat better, but did not end up good loaves. I'm not sure of the real problem, but have an idea the Zojirushi doesn't initially mix as well or as thoroughly and only has one true kneading.
If I use the preset cycles, every loaf I've made has burned and even the doughs have dried out. I will most likely purchase a new Breadman & try again.

I have owned two other bread machines and after wearing out the last one, a Hitachi that gave great service for five years, I was looking for a better replacement. I have heard that the Zojirushi machines were good and after purchasing can state that I think it is great! My only reservaation would be with their recipes in that I end up putting in extra yeast and water to get the perfect loaf. In their defense, however, the user guide's troubleshooting section suggests this fix. Today I'll be making more whole wheat which has always been a challenge in the past but is pretty easy with the Zojirushi.

Inconsistent

My wife has used a Breadman Plus for several years. The loaves turn out almost every time although the texture is a bit dense. For Christmas I purchased the Zoj. She has attempted to make 6 loaves to date and only one (1) has turned out. Let me explain.

The unit has not done a good job mixing the ingredients and the rising has been inconsistent. Several loaves were so poorly mixed that they failed to properly rise and the resulting loaves were so misshappen as to leave an impression of an experiment gone wrong. One loaf never did completely cook.

She tried a recipe from the Zoj site to make a cake. It came out so dense (about 1.5

1st & 2nd loaf arghhhh Then.......

I was excited but apprehensive about this bread machine. After reading reviews decided to purchase.
First loaf tasted good but looked awful with rise and falls on top. 2nd loaf I followed the directions on what possibility caused the problems and still same problem.
3rd loaf..bought different bread flour and it was the most beautiful and tasty loaf of bread that was consumed in a flash. Since the new flour..every loaf comes out perfect be it white, whole grain or sour dough. Proud to put it on the table for company!
LOVE this Machine!!!!!!!!!
The other bread flour wasn't old but it is much heavier than the new brand. Any input?????

Loaf Texture

Following the recipe for wheat or rye bread that is supplied, the loafs do not knead evenly and bake to a very rough and uneven texture. One side of the loaf is always higher than the other.

My new Zo.

This is a great bread machine. Their recipes work the best, they say this in their literature. I have only had mine a couple of weeks but it does make great white bread. My pound cake turned out great but I can't say the same for my wheat bread. Most likely operator error on that. I will continue to tweak that recipe until I'm happy. It's a bit expensive but I hope it will last for years.

Works fine but a little expensive

A replacement machine for an earlier brand that kneaded itself off the counter onto the floor thereby destroying itself. So we upgraded. The manual could use some exposition.....pretty basic. The sour dough cycle for instance could use some explanation as to its use as a leavening cycle. Poolish or Briga looks possible but no mention. Three custom cycles are a great addition to the menu. I think a beginner might be a little put off by the lack of a real manual so I would consider this a good follow on machine for someone who has been making bread for some time.

The Zojirushi has the reputation for being the best bread machine made. I have not used other machines, but find the comment likely to be true. It is very easy to use. The instructions are clear and concise. The display is thoughfully considered. I am particularly pleased with the timer which allows me to wake up to the smell of fresh-baked bread. I have not attempted breads with different grains or fresh ground flour, but suspect it will work fine. The recipe provided for basic bread worked fine. I suspect the several other recipes provided are equally well tested.

The size is convenient. It can easily be stored beneath the counter when not in use. The construction looks and feels solid. The design is functional and utilitarian. The Zojirushi is designed to work, not to be looked at, but it is by no means an eyesore.

Even as a person who enjoys baking bread and who does not believe a machine is necessary, I find the convenience of this machine a hugh plus. No kneeding is required, the process creates no mess, there is almost no clean up, and the timer is fantastic. I also recommend that you compare the cost of your current bakery bill to cost of using the Zojirushi (don't forget to include the cost of electricity to use the machine). It may easily be considered a sensible purchase.

A bread machine may not be for everybody, for example, if you have lots of free time, and like kneeding bread for the theraputic workout, if you like a sparce kitchen with only the essentials, and if you are old-fashioned about the nuances only a fully-hand crafted bread can embody. But the Zojirushi offers more capability than I expected. I intend to use the machine to make fully-kneeded dough for rolls that can bake in the oven, and to make starter dough with my favorite yeast to keep in the fridge.

For these reasons, I recommend the Zojirushi Supreme Bread Machine.

I didn't want a bread maker until I saw this one. The big selling point for me was it has so many options (unlike other machines I have seen), is very easy to use, and I love that it makes a normal rectangular loaf. I like the dough option. I have made bread, pretzels, and pizza dough so far. I love the bread! I will try the cake and jam options. Before I got this I didn't want the tedious work of making dough and bread by hand.

I am loving this machine. The VHS tape that came with it was very helpful. I've made about 6 100% whole grain loaves with it. They've been a tiny bit dry, so I'm going to start adding more water, but the machine is great. Easy to use, makes horizontal loaves, has lots of optionssuch as delayed timing, active or fast yeast, dark, medium or light crust, dough or finished loaves, etc. (also jams and meatloaf.!)

Wake up to the smell of fresh bread

The 2-lb. Home Bakery Supreme Bread Machine by Zojirushi is definitely one of the better breadmakers on the market today. My girlfriend was diagnosed with Celiac Disease in late 2005, which means that she cannot eat products containing Gluten from Wheat, Oats, Barley, or Rye. This made it almost impossible for her to eat bread of any kind. The only bread which was certified gluten-free was not only exhorbitantly priced, but did not taste very good either. After putting up with bad bread for nearly one year, I decided to purchase this bread machine. This purchase quite literally changed our lives. The Zojirushi machine makes incredible bread, and inundates the home with a mouth-watering scent. We can now make bread using the ingredients we want, and with the type of crust we want. The timer allows my girlfriend to have fresh bread greet her in the morning. The hardware is very simple to use and to clean. The user-interface is not all too friendly at first, but you can quickly get used to it if you use it often enough (if you own it, you will). I would definitely recommend it to anyone.

Excellent machine

Excellent product, I would highly recommend it. But a word of warning, you must follow the recipies EXACTLY, any deviation from the recipies can cause unexpected results. It's a science.
