I purchased 2 books, one to give my sister-in-law, of whom I have been teaching to can. And I can tell you that she cannot put that book down! The book inspired her to purchase a pressure canner and I will be going to her home to encourage her and teach her how to use it! Thanks for the updated book!
In the old Blue Book, you had a recipe for "zucchini or okra tomato sauce" which I still use for my zucchini, but you took the zucchini out of the recipe, was there a reason?
I also put powdered beets or cooked and pureed beets in my tomato sauce and salsa for color (I do pressure can to the timing of beets to make sure, since the beets lower the acidity of the tomatoes. Is that a possibility for your test kitchens to add as a recipe for the book?
