This is a fantastic grill pan and I can already see that it increases its quality with time. As with other cast-iron based products, the more "seasoning" it gets from cooking use, the better it is. My only note for other users is that even if you use very little fat or oil, it produces a fair amount of smoke early on. I live in a tiny apartment with no proper ventilation so it always sets my smoke alarm off. Never burns the food and it's not too hot, simply that whiile it's breaking in it smokes a bit when the drippings fall below the grooves and cook. Wouldn't keep me from buying it but other non-ventilated kitchen owners should know that about it.
