Best large French oven on the market
The 6.75 qt. French oval oven was a long-awaited addition to our kitchen after five years of relying almost daily on the 3.5 qt. round oven that we used for everything from boiling pasta to browning meat and building soups and stews (always lamenting that we were about to boil over). As a family, we recently made major changes to our diet, having found a farmer who provides us with pastured beef, free-range chickens and their eggs and other organically raised animals, so we decided it was time to step up to a pot that could handle a large pork loin or a whole large chicken or more than one pound of chuck (or wild Alaskan salmon, for that matter) at a time. This is that pot. While the oven is heavy, that heft reminds us of the pot's virtues and the rules of its use: lower heat for better heat retention and more even cooking. Our first meal was a Cuban beef dish, seasoned with onions, cumin and cayenne and simmered for several hours over low heat. It was delicious and a great start to a new relationship with a beautiful pot.
