Great value, clear technique reviews
Great book for reviewing techniques. Great book to carry along to have something to read while waiting in offices. Breadth of ieas is extensive, and an excellend value for the price. Certainly not a LCB or CIA text, but good for intermediate chefs taking their techniques up a notch.
