While this universal double boiler is very good and will make a good gift to my daughter, I was hoping to be able to give her one like I purchased many years ago. My universal double boiler has about a two quart capacity. The lowest part is shaped like this 2 cup double boiler, then it widens to fit in a larger pan and accept much more liquid so that it is good for making a large amount of custard or for beating egg yolks for saboyan or egg whites for boiled frosting. The upper edge has the handle on one side and a small handle on the other for both supporting the pan on the edge of the larger pan with water in it, and as use as a handle.

Expected the insert to be bigger. This insert will not melt much.
