Emeril doesn't fail as usual. His TV shows made things look easy and this book does too. There are recipes that range from easy to a bit more complicated but for the cook that can follow a recipe it looks to be a winner. I purchased this as a Christmas gift for a gentleman in our family that cooks all the time. I think he will use and enjoy this cookbook BAM!
