The word tajine refers to both the contents and the container. A tagine is a dish made from glazed clay, which has a lid like a pointed hat, allowing the steam to circulate inside. All recipes cooked in this type of dish are also called tagine. Moroccan cooking leaves a lot to instinct, let your imagination guide you and create your own tagine! I've only had my tagine for about a month, and I've used it twice. One of the dishes I made was a pork and butternut squash tagine that was wonderful. The tagine cooks very slowly and evenly, and everything comes out lucious. I am looking forward to trying more tagine recipes, and also using it for dishes that I previously cooked in a crock pot. I highly recommend it to others!

Ceramic

I wanted a Tagine for a few years. So I picked up an inexpensive terracotta one. I needed to double the cooking time since I couldn't use the terracotta one on the gas burner. I didn't want a cast Iron one since I had past experiences with cast iron pots chipping the ceramic coating off of the burner trivets.

This Tagine, being a specialty ceramic, can be used from flame top to oven an into the refrigerator. I believe it can go in the dishwasher too, but it cleans up so easily and I didn't want to dull its finish.

It is a very lovely and strong cooking vessel. It does a perfect job cooking those yummy, melt in your mouth Moroccan dishes.
