I got it because it was recommended by Cooks Illustrated/America's Test Kitchen and they did not steer me wrong. I have kitchen knives that I have had for over 30 years. This sharpener is easy to use and has made the edges like new. It is expensive; no doubt about it, but it is worth it.
The instructions for this knife sharpener are complicated, obtuse & difficult to understand. They are written as if the only people using the machine are professional knife sharpeners who have sharpened thousands of knives. The instruction manual could be significantly improved by putting in some pictures of knives & the machine in action.
The performance of the machine is excellent. My solid edge knives couldn't be sharper -- and perhaps even sharper than when purchased. I'm not so sure it does much good for the serated knives -- I don't see much difference. But then, perhaps, I don't understand the directions for serated knives (other than it says that it supposedly works on them).
This product put a better edge on my knives than they came with, and they are one of the top German brands. It is easy to use, and the automatic spring-loaded edge angle feature works as advertised.

This knife sharpener really delivers a fabulous cutting edge! I had knives that were ready to be thrown away, and now they are, once again, favorites! I cook with fresh fruits and vegetables ever day, which means a lot of pealing, slicing, and dicing. What a difference a sharp knife makes! I highly recommend this knife sharpener.
I have hand-sharpened my knives for years, and I do a good job. A very good job. Finally, after seeing the reviews for the Chef's Choice, I decided to take a rest and give it a try. Glad I did! As others have made clear, IT IS IMPORTANT TO READ THE INSTRUCTIONS! Having done so, I am pleased by the speed, and well satisfied by the ability to get a beautiful cutting edge on my knives. Sigh... Should have done it years ago.
Never have a dull knife again.I sharpened all my dull kitchen knives as soon as the White professional sharpening station arrived in the mail. You must becareful however, because the blades are so sharp that I cut myself several times because I was not use to cutting with a sharp knife.
I've been reading about the recommendations for this product for awhile but put off spending this much money. I finally took the plunge and I'm so thrilled. This product exceeded expectations and I will use it for many years to come. I cook alot and use my knives daily so they constantly need sharpening. My knives have never been so sharp! My husband is my knife sharpener and he loves using this so much that he eagerly jumps on the chance to use the sharpener so I haven't even had a chance to use it. It works so easily and well. Highly recommended!
The instructions are complicated if you are not familiar with the product. I do not have any steeled edge knife so that part will probably never be used. I wish this had been explained in the product information before I purchased it. the first and last station are enough for most home use.
I got this for myself because I can never get a knife sharpened really well. But my husband, who does the knife sharpening the old fashioned way ... when he gets around to it ... and so our knives are dull most of the time, found me working on the first knife, and he took over sharpening all the knives. In a fraction the time it usually takes.
Does a great job, IF YOU FOLLOW INSTRUCTIONS. I made sure all in family (the men) read the instructions BEFORE they tried anything and it went very well, for both kitchen knives and personal knives. Perforned as promised-cook prep is a joy again, as the knives are sharp!
It is great to finally have a knife sharpener that is easy to use and does the job well. It is quality construction and looks nice enough to leave on the counter if one would want. We process elk, venison and hogs every year so a sharp knife is a must.
I have been sharpenig knives for years with an Arkansas stone, It takes several days on and off to get a fine edge that will last. With the Chef's Choice Sharpening Station I am able to put that same edge in less than 30 minutes. Knives that were not blunt or dulled from over use or from cutting around bone were sharpened in about 5 minutes.
This is a great product.
