For straining fruits, vegetables, soups and sauces, this Chinois is a wonderful kitchen tool to have. It is made entirely of stainless steel with a fine mesh that prevents seeds, pulp and skins from slipping through. A hook on one side holds to the side of your pan or bowl as you work. This chinois worked beautifully for my creme brulee. The only reservations I have about it is that even after several thorough washings, it leaves grey streaks on my hands. I'm not sure why this is. But otherwise, I'm pleased with it.

Chinois needs a pestle

I love the chinois but need a pestle to use with it for the purpose of pushing the stuff thru the sieve.
