This generous, professional-weight 12" stainless steel drum sieve, or tamis, means business. Pounds of tomatoes for a sauce or tender chickpeas for hummus can pass through the stainless steel mesh. Its wide, flat sieving area allows the food to be pushed with a broad, flat motion that is not tiring. This sieve is strong enough to withstand the pressure of heavy purées and is destined for a long and productive life. The wire mesh is sandwiched between the upper and lower frames of the round and locks into place with three lateral clamps.
