It is not an exaggeration to call this pan revolutionary. Like all springform pans, its sides are separate from the bottom and spring free automatically when the clamp is released. These sides, however, have a nonstick coating, so there is no need to run a knife between the pan and the cake—say good-bye to ragged edges. The base is heat-proof glass, which won't be marred by a knife when the cake is sliced and makes a nice serving plate. Finally, the pan has two large handles, a benefit when the filled pan needs to go from counter to oven.

Nice and deep, and the handles make a huge difference...so much easier to grasp, to move in and out of the oven, etc. Plus, the glass bottom is easy to clean and a nice surface upon which to slice as it doesn't get scratched like a metal surface would. I've used it for a variety of things in addition to cheesecakes and would definitely recommend it. In this instance, you DO get what you pay for!

I love cutting on a glass bottom rather then the medal spring form bottom which would have resulted in many scratches after a few uses. I look forward to baking a cheesecake in it along with many other recipes. If you do a lot of baking in a springform pan, the glass bottom and handles make it worth the price.
